【摘要】:Thistestmethodevaluatestheenergyconsumptionandbakingperformanceofrackovens.Thefoodserviceoperatorcanusethisevaluationtoselectarackovenandunderstanditsenergyperformance.Thistestmethodisapplicabletothermostaticallycontrolled,gasandelectricrackovens.Therackovencanbeevaluatedwithrespecttothefollowing(whereapplicable):Energyinputrate(10.2),Thermostatcalibration(10.3),Preheatenergyandtime(10.4),Idleenergyrate(10.5),Pilotenergyrate,ifapplicable(10.6),Whitesheetcakebrowning(10.7),andSteamperformance(10.8),andBakingenergyefficiencyandproductioncapacity(10.9).Thevaluesstatedininch-poundunitsaretoberegardedasstandard.Thistestmethodmayinvolvehazardousmaterials,operations,andequipment.Thisstandarddoesnotpurporttoaddressallofthesafetyconcerns,ifany,associatedwithitsuse.Itistheresponsibilityoftheuserofthisstandardtoestablishappropriatesafetyandhealthpracticesanddeterminetheapplicabilityofregulatorylimitationspriortouse.
